My apologies for missing your usual Tuesday morning reading. The week has been very busy, with the number of books and files to be sorted and placed in my new office. I started seeing clients in the new space – virtually only, of course – and it felt really good. One wall of my office is a huge window, and I am so much enjoying the sunshine. The rain, not so much. And when the rain came through the window, even less.

Now here is the recipe:
5 garlic cloves, peeled and chopped
1 teaspoon olive oil
1 cup brown rice, raw
1 ½ cups sugar free broth
1 ½ cups water
1 teaspoon Mrs. Dash
½ teaspoon onion powder
½ teaspoon any other seasonings you like, or the ones you are using in your main dish today.
Coat a pan with no stick spray. Heat 1 teaspoon oil, and sizzle the garlic in it till it is golden. Add the rice and toast it gently till it, too, is golden. Add the broth and water and seasonings; simmer 45 minutes or until it is done as you like it. Enjoy.
Makes 3 cups.
1/2 cup (3 ounces) counts as one starch serving
Freeze this rice in one portion baggies. On the days when you need a fast starch, just take it out of the baggie and microwave till hot!
